Speedy Chicken Tikka
Assemble this spicy and colourful plateful — starring tender Co-op British chicken — in just over half an hour.

Ingredients

2 tbsp tikka masala paste 50g Co-op natural yogurt 1 tsp fresh ginger, grated 1 clove garlic, crushed Pinch of chilli powder 2 Co-op British chicken breasts 3 tsp Co-op olive oil 150g Co-op basmati rice 4 Co-op piccolo tomatoes, chopped 8cm chunk cucumber, chopped 1 red onion, chopped Lemon wedges and chopped fresh coriander, to serve (optional);

Method

1. In a bowl, mix the tikka masala paste, yogurt, ginger, garlic, and chilli powder 2. Stir together and season with freshly ground black pepper 3. Add the chicken breasts and coat well in the marinade 4. Heat 2 tsp olive oil in a griddle pan until hot 5. Add the chicken breasts and cook on one side over a medium heat for 15 mins 6. Remove the chicken breasts and wipe the pan with kitchen paper 7. Add 1 tsp olive oil to the pan and cook the other side of the chicken for a further 10 mins 8. Meanwhile, cook the rice according to the pack instructions 9. Make a salad with the tomatoes, cucumber and red onion 10. Slice each chicken breast and arrange on 2 plates with the rice and salad 11. Serve with lemon wedges and sprinkle with chopped fresh coriander, if you like
